Easy vegan cheese sauce in 15 minutes
For this vegan cheese sauce that can be used in pasta and vegetable dishes (it can even replace nacho cheese in Mexican-style recipes!) you will need no fancy ingredients. In fact, you probably already have all you need in your cupboard and fridge.
The quantities can be tweaked to your needs. However, following these instructions will give you a bigger batch that can be stored in the fridge for a week or longer.
Ingredients for an easy vegan cheese sauce:
- 1 cup of potatoes, peeled and diced
- 1 cup of carrots, diced
- 1 onion, diced
- 1 cup of cashew nuts or almonds, finely ground in food processor
- salt and pepper to taste
- water
Place the vegetables into a saucepan and add water (just about enough to cover the veg by a centimeter). Cook for 10 minutes until the potatoes and carrots are soft.
Pour the boiled veg with the cooking water into the food processor with the ground cashews or almonds and mix well. Once you have an even, creamy consistency, return the sauce into the saucepan and let it simmer for a couple of minutes. And here’s your easy vegan cheese sauce, waiting to be added to your favorite pasta of veg dish! The potatoes give it it’s creamy and full texture, the carrots and onion it’s sweetness and depth of flavor while the nuts make it gooey, nutritious and delicious!
TIP: Add chilli & garlic powder, some cumin and turmeric to get the PERFECT nacho cheese replacement for Mexican dishes! If you wish to add a more intense savory dimension, just add a teaspoon of nutritional yeast!
